Salmon and Veggie Bowl with "Peanut" Sauce
I love this recipe because it’s super simple and insanely delicious.
Here’s how to do it in five simple steps:
MAIN INGREDIENTS
Salmon (be mindful of where it’s been sourced from!)
Veggies of your choice (I used carrots, broccoli, brussels, zucchini)
Rice (any kind, but I used mixed rice)
Scallions (optional - to top with)
SAUCE INGREDIENTS
1/4 cup Sunflower butter (or any nut butter. You can also use Tahini)
2 tablespoons lime juice
1 tablespoon coconut aminos (or tamari or soy sauce)
1/4 teaspoon powered ginger (or fresh ginger)
1/2 teaspoon rice vinegar (or white vinegar)
1/4 cup coconut milk
HOW TO:
Cook your rice
Steam your veggies (I can cook rice and steam veggies simultaneously in my rice cooker)
Bake your salmon (or cook however you usually cook it) - we just drizzle some oil or gheeo on the salmon and sprinkle with salt and pepper.
Make the sauce: Put all sauce ingredients into a blender and mix until smooth.
FINALLY, scoop some rice into a bowl, them sit the salmon on top, spread veggies around the salmon, drizzle with sauce, and top with scallions.
