Quick and Delicious Coconut, Chocolate Chip Cookies [dairy free, grain free]
INGREDIENTS
1 cup almond flour
1/4 cup coconut flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup coconut sugar
1 teaspoon cinnamon
6 tablespoons coconut oil
6 tablespoons cashew butter (or almond butter)
1 egg
1.5 cup chocolate chips (I use Enjoy Life mini chocolate chips)
a handful of shredded coconut
a handful of macadamia nut pieces
HOW TO
Preheat oven to 350
Line cookie sheet with parchment baking paper
Mix dry ingredients together in a bowl
Mix “wet” ingredients together in a different (you don’t have to melt the coconut oil ahead of time)
Add “wet” to dry ingredients, mix well
Fold in chocolate chips, macadamia nuts, and coconut flakes
Spoon dough on the cookie sheet
Bake for 12-14 minutes, depending on how soft/hard you like your cookies
