Perfect Paleo Pancakes

Ingredients for 5-6 pancakes:
1/2 cup almond flour
1/2 cup tapioca flour
2 eggs
1/4 cup unsweetened applesauce
1 tsp baking soda
1 tsp vanilla extract

+ Coconut oil to cook them in

Topped with:
Strawberries
Coconut flakes
Honey & melted Trader Joe's cookie butter *NOT paleo, but so worth it
1. Put all ingredients in a blender (I use a ninja) 
2. Use a griddle on about 350 degrees F. If you don't have one, get one. You can cook them all at once and it's so easy to flip them on a griddle. 
3. Melt coconut oil all over the griddle

4. Pour pancake mixture on the griddle into 6 pancakes
5. Let pancakes cook for a few minutes before flipping (You'll know when it's time to flip). Plus, if you use a griddle it's hard to mess this part up. Flip, and let the other side cook all the way. 
6. Plate your delicious fluffy pancakes, smother them in your favorite toppings, take a pic 😜 & dig in! 🍽
