Nutty Seedy Protein Bar Recipe

I feel like I've been on the search for my "dream protein bar" for ages now. Like seriously, it kind of blows my mind that the options are so... meh. Now I'll admit I'm a little crazy about reading every ingredient label and not buying anything that contains stuff I don't prefer to eat, like weird whey or pea proteins, oats, grains in general, or tons of fruit with little to no healthy fat and protein. It makes it so hard for me to grab a quick snack at the store for hiking and off-the-grid trips. And honestly, frustrates me. 

When I'm not ready for a full meal or just not in the mood to eat a lot, I default to "snacks" like strawberries + fresh ground almond butter, macadamia nuts, a grass fed meat stick, or guacamole and carrots / peppers / plantain chips. So clearly, I keep it pretty clean already, but what's a girl to do? All I want is a clean, no B.S. on-the-go snack to keep me full and nourished. 

To all of this I say, "If you can't find what you're looking for, CREATE IT!"

And so I did. 

The perfect combination of healthy fat, carbs, and protein....I introduce to you the Nutty Seedy Protein Bar. 

Nutty Seedy Protein Bar

Ingredients - 10 servings: 

  • Almonds - 1/4 cup

  • Sunflower seeds - 1/4 cup

  • Walnuts - 1/4 cup

  • Pumpkin seeds - 1/4 cup

  • Chia seeds - 2 tablespoons

  • Shredded coconut - 1/2 cup

  • Medjool dates (pitted) - 6

  • Coconut oil - 1/4 cup

  • Coconut nectar - 1/4 cup

  • Further Food Collagen Peptide Protein - 2 scoops

  • Cinnamon - 1 teaspoon

  • Sea salt

How to: 

1. In a food processor combine 1/4 cup coconut nectar and 6 Medjool dates (pitted). Blend until you get a yummy looking paste.

2. Combine paste in a mixing bowl with 1/4 cup melted coconut oil. Stir/Whisk to combine until mostly integrated. *there will be some coconut oil that doesn't fully combine, that's okay!

3. Add two scoops of Further Food Collagen Peptides to the paste and mix. This will combine well with the coconut oil. 

4. In a blender (or clean food processor), combine almonds, sunflower seeds, walnuts and pumpkin seeds. Quickly blend to chop and combine but DO NOT pulverize them into a powder or eventual nut butter. 

5. Mix the blended nuts into the paste mixture with a spoon. Keep mixing and combining until it all becomes one. 

6. Add chia seeds and coconut flakes to the mixture and keep combining all of the ingredients. These two will soak up any remaining coconut oil you might be seeing. 

7. Finally, add cinnamon and a sprinkle of sea salt to the mixture and combine everything evenly. 

8. Line a baking sheet or pan (I use a 5" x 8" metal pan) with parchment paper and press the mixture into the pan firmly. The tighter you pack it in the better. Then cover the top with another layer of parchment paper and stick it in the freezer. 

9. After about 20 minutes or so you can cut them into 10 bars, wrap them in individual parchment paper and refrigerate. 

Voila! Easy peasy bars to nourish and fill you up!
