Egg Roll Unleashed + Sweet & Sour Sauce (WHOLE30)

Egg Roll Unleashed

Ingredients - 4 servings
2 tablespoons coconut oil
2 tablespoons sesame oil
1 large cabbage, sliced
1 large onion, sliced
2 cups spinach, chopped
1 cup shredded carrots
1 inch ginger, grated
3 cloves garlic, diced
1/4 cup coconut aminos
1 lb ground pork

How to:
1. Once everything is chopped, add the oils to a large skillet  and heat over medium heat. 
2. Add the cabbage, onion, and carrots. Cook until tender, 
3. Add the ginger, garlic, spinach, and coconut  aminos. Cook for 5 more minutes. 
4. Add and cook the ground pork until fully cooked through, about 10-15 minutes. Stir regularly to evenly distribute. 
5. Serve with sweet and sour sauce on top!

 

Sweet & Sour Sauce

Ingredients
1 large onion, diced
coconut oil - 1 tablespoon
3 cloves garlic, diced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2-3/4 cup water or broth
1 8oz can crushed pineapple *in juice (not syrup) 
1/4 cup tomato paste
2 tablespoons coconut aminos
2 dates

How to: 
1. In a medium sauce pan, cook onion in coconut oil
2. Add garlic, salt, pepper, water, pineapple, tomato paste, coconut aminos, and dates. 
3. Cook for 10 minutes, then take it off the heat and blend using an immersion blender, a blender or food processor.
